Parking lot fiestas call for Corn Muffin Sombreros

It's not a fiesta without Corn Muffin Sombreros!

Gigi lives in the coolest little community with the most diverse group of neighbors ever! They decided it was time to have a little parking lot party. Fiesta themed! Who doesn't love a fiesta?!?

Sangria was made, magical margaritas were consumed and so many great dishes were brought to share. Yummy chips and salsa, salads, fajitas, fruit, corn. You name it we had it! Oh and Gigi's rice salad which is AMAZING!!! When she blogs it I will share the link here for you guys!!

My contribution besides my crazy sense of humor and lots and lots of salsa music was something that just sort of happened.

Originally I found this recipe on allrecipes.com, we did some serious alterations and something happened in the oven my muffins fell. They were sort of sad looking then something fun happened.

When taking them out of the muffin pan flipping them over they managed to look like sombreros. CORN MUFFIN SOMBREROS were born!!!

Oh one more thing my friends....these are in no way what so ever healthy ahahha!

what you will need:
2 boxes of Jiffy Cornbread mix
2 can of cream corn
1 stick of butter ( softened/melted)
2 cups of Sharp Cheddar shredded
2 cups of Colby Jack shredded
1 medium can of green chile's

Directions:
make the Jiffy according to the box directions.
mix in the rest of the ingredients.
before adding the chile's I squeezed a lot of the moisture out of them so they wouldn't make the muffins mushy.

Preheat and cook according to the Jiffy box directions.

When I took mine out this is when they fell flat but it worked out! They were so good. I suggest making these the day before your event and use paper towel between layers when stacking them to absorb some of the butter and moisture.

Everyone loved these! The recipe was even passed on to Cybelle for a fiesta she was attending!
